What makes enzymes so special?

Enzymes play a crucial role in metabolism by regulating biochemical processes and supporting the breakdown of food components. They are responsible for breaking down complex molecules such as casein, gluten, polysaccharides, lactose, cellulose, pectins and xylans into smaller, more easily digestible units.

Each enzyme fulfills a specific, essential task, especially during digestion. In addition, their activity is pH-dependent, which means that they reach their maximum efficiency in the digestive tract at the right places. If the enzymes do not function properly, gluten and casein, for example, cannot be broken down adequately, which can lead to chronic inflammation in the gut.
